Light bavaroise (25% less fat)

 

To prepare licht mousse or bavaroise an part of the fresh crem can be repalced by Merenque, because mernque is more airated the mouse will be lighter and cheeper in production cost.

For a standard recipe replace 25% of the fresh cream into whipped Bianca merenque, this will improve the volume and give less fat on the end result
