Bread improver flexible dosing solution

Zeelandia was challenged by one of her most important industrial (group of) customers to design an intelligent system for the use of bakery components in the production of daily fresh bread. The project was successfully finalised in 2007.

The customer in question has spread the production of both pre-baked and daily fresh bread and pastry products over more than 20 production plants. For the production of daily fresh bread Zeelandia was supplying the daily fresh bread production with a large assortment of tailor-made products, containing salt, packed in plastic charge packaging and with very different dosages; varying from 5% for normal breads to 32% for special breads. For almost every location Zeelandia offered special products,  geared to the moulding capacity and processing on the spot. To put it briefly,  improvement of the current situation had to offer advantages for both parties.

Flexibility in Optima-Forma!
The new system has a very limited amount of components: 6 liquids and 1 powder. None of the products includes the component salt, which now is bought and added separately in the form of brine.
The system enables the customer to compose the ingredients per type of bread. In this way the customer can supply each of his retailers with different end products. In concreto: only 7 components yield a complete assortment bread and rolls. 
A specific dosing system was designed in cooperation with the Dutch companies Technology Unlimited (TU) and H2. And next to this a special container – with extremely good stream-out properties - was developed.
