Custard fillings
Custard fillings in industrially produced pastry should taste like traditional custard, but is processed in a very different way! The custard is mixed, pumped and dosed in a fully automated process. This process should be clean, continuous and precise. The picture shows such a fully automated line using a Zeelandia custard as pie filling.
